Here's the recipe of the gingerbread we made:
Ingredients:
- 1 kg flour
- 4 dl of powdered sugar
- 2 teaspoons (or coffeespoons) of baking soda
- 2 teaspoons of cinnamon
- 2 teaspoons of powdered cloves /note: you can buy special mixture of spices for this cake/
- a pinch of salt
- 10 dkg of margarine or butter
- 3 whole eggs
- 2.5-3 dl of honey
- 1 egg's white and 6 tablespoons of sugar for the decoration (note: as we did, you can use different nuts eg. hazelnut, almond etc. as decoration)
Mix the flour, the powdered sugar and the spices then crumble the margarine or butter in this mixture. Put the honey and the eggs in the middle and mix the whole well. Maybe the pastry won't stay in one piece, so leave some flour and add it to the pastry in smaller amounts. Be careful, the pastry shouldn't be too soft, as it would rise overly and the figures "melt" in the oven and in addition, the surface of the cakes will be pitted. Then cut a small piece of the pastry and roll it over on a well-floured surface until it is 2-3 mm thin. Afterwards you can cut the figures (traditional figures are: Christmas-tree, bell, heart, star, bird, angel etc. - usually connected to Christmas; but you can cut any shapes you prefer;) ). If you're ready with the figures, put them on an oven pan, which was previously buttered and floured (it is useful if you use a bigger knife to put the figures on the pan - then they won't lose their shapes) . Bake the cakes in a mid-hot oven (ca. 175 °C) for about 5-10 minutes (or more if it's needed), but be careful not to burn them as they can burn easily. The pans don't need to be buttered again, but if you put some flour in it, it won't be harmful. You can decorate the cakes before or after baking. The decoration: beat the eggwhite and the sugar together by adding the sugar in small amounts until it is solid enough to draw... Tip for drawing: cut a very little hole on a corner of a small nylon bag - it is the easiest way to decorate with this white "icing":)
